Um I hate a BBQ Chicken Pizza, it was good, but it was too sweet, and now I feel sick.

For today, I'm going to have Malibu Chicken with a baked potato. A lot of people assume Italian people are Catholic, but for me, food is my religion haha. That's why I already know what I'm going to have for dinner. :)

yesterday I bought all the ingredients for Nachos and when I went to make it last night half the bag of taco chips was gone - teenagers!

Last night I made a pork loin roast rubbed with garlic powder, baked sweet potatoes, apple sauce, green bean casserole and my f.i.l. made the most delicious fried cauliflower which we noshed on while waiting for the roast to cook... Delish!

We are having corn beef and cabbage. We had it last week but we had so many potatoes and cabbage we bought another corn beef so not to waste.

Last night I made Chicken Scallopini. It's lightly breaded sauteed chicken with mushrooms, artichoke hearts, and capers, then you pour a lemon/wine/butter sauce over it, and serve it over linguine. YUM! Except that I had to make it for six people last night, so I kept forgetting to double certain ingredients.

Last night was my weird dinner night :rotfl: While my hubby had sloppy joes, which I really don't like, I chopped up some ground beef, added some rot-tel tomatoes... and then put in two bags of cooked beef ramen noodles. It wasn't bad for weird.

Add another Italian/ Catholic-raised to the list. It's just that my southern hubby cramps my Italian cooking.

eta. Momster, my kids and hubby do that all the time to my bag o chips and wee moggie I'm coming to your house for dinner. SMR too.

ha, that's reminiscent of my Italian family. My mother's first thought in the morning was what should she cook for dinner. A good day for me is to have the time all day to cook a great meal.
Yesterday I made an Indian dish, chicken tikka masala which was inspired by my finding fresh Naan in Whole Foods. Love foods from all cultures. That's dinner tonight.

Tonight I am trying a new recipe from Americas Test Kitchen..Baked Manicotti..it uses Barillas no-boil lasagna noodles...which you roll instead of tryin to fill those darn shells with a pastry bag..

Thank you for all of the great responses. I didn't realize there were so many Italians here at Etrain. Ho i parenti in Italia. In particolare, abitano vicino a Napoli.

Chatty, Wee, LilRedDevilLizzy: Now I'm even more hungry lol.

Actually, the Malibu Chicken is found at this Greek eatery near my home in Chicago. I believe it is a California recipe, and I'll make sure to check into that for you Nanab. :)

To those of you in New York and California: I LOVE your pizza. My favorite is still in my hometown of Chicago, but you guys have great pizza too. I visited NYC last summer and LA acouple of years ago.

man - Italian theme going on! Tonight I doctored up jar sauce with sauteed onions, garlic and ground beef and poured it over penne - with a salad and fresh grated parmesan -

Oh! I've been wanting to try that one! I love America's Test Kitchen; I record them and I also have an online subscription to Cook's Illustrated, which is partnered with them. I even bought Barilla's manicotti shells, but I just haven't gotten around to making it. Tell us how it turns out!

To continue the Italian theme, I'm making spaghetti, but it's nothing complicated--just some red sauce from Classico! I need something quick tonight! I LOVE fresh Parmesan cheese (that green can is not allowed in my house!) so I plan on grating a small mountain over my spaghetti, lol!

Now you're all getting me hungry for some Italian. My kids favs are Cavatelli. I'm gonna have to go get some for tomorrow. If I had time, I'd make them myself... love rolling them. We have this local company that makes the best... P&S. So that's what we'll have tomorrow... with some Italian sausage.

The recipe turned out great..it uses the Barilla brand no-boil lasagne noodles..
Not sure is that is the same one you have...but you can get it on the Cook's Illustrated site..
I see your a parm lover too...I just picked up some wonderful organic Parm Reg
at Costco this weekend...

My boyfriend took me on a date to this little Italian place downtown. It was a home cooked meal that was great. We shared an antipasto and then I had Veal Parmigiana con Spaghetti. The red sauce was absolutely delicious. It was quite romantic too. He is so good to me......or so he told me to write that just now haha. ;-)

I put a London Broil in the crock pot this morning with potatoes and onion.

My parents had basa fish with a little bit of mayo and cheese fried onions. Roasted garlic white potatoes, and spinach with a little bit of havarti cheese.

Tonight we had tacos and chocolate chip rice krispie bars. I left out the sour cream and ground beef. My boys left out the tomatoes. We each had two rk bars!
